Vegetables: For Breakfast?

Hey there! Welcome to the FIRST DAY of the May Challenge: eat more veggies. I thought I would kick it off with some ways to incorporate vegetables into your first meal!

Now, I am the person who would always prefer sweet things in the morning, so eating vegetables in the morning is a stretch for me! But whenever I do, I get to know I made a dent in my veggie-quota for the day; I love crossing things off my to-do list!! Here are some fun and sneaky ways to eat your veggies in the morning :)

Omelet

Or whatever version of this you can make, if your chef skills aren't on point 😂 Omelets are a super easy way to include vegetables in a meal! Sometimes if I don't feel up to attempting this culinary feat, I will place scrambled or fried eggs on a bed of leafy greens- and add ketchup or salsa :) This is one of my favorite ways to have veggies in the morning, since my taste buds are used to eating eggs in the morning!

Smoothie

A great way to still have that sweet taste in the morning, and eat your veggies too!! It is so easy to blend up a simple smoothie with a handful of fruit and some milk, and even easier to sneak in some veggies! I always opt for spinach, but kale is another great option 😊 And the options are endless when it comes to smoothies, so this is a great option if you get bored of foods quickly!

Egg Muffins

Now this could maybe even qualify as a type of omelet, but I am going to put this baby in it's own category, since I always make it ahead of time! Meal prepping is a truly great thing;) They are SO EASY to make: Crack one egg in each slot of a muffin tin (make as many as you want), and add in desired vegetables and spices. Another version of this, to make the muffin fluffier, is to mix all the eggs and veggies in a bowl prior to pouring in the muffin tin! Both methods are great, and have very different textures!!

Toast

Usually in my house toast is topped with peanut butter (and maybe some chocolate chips) or jelly. Buttttttt I have been seeing how much people RAVE about avocado toast! I tried this out and I LOVE it too!!! We don't always have avocados in the house, but when we do I now take advantage of it! I would not count avocado as a vegetable, but it is super yummy to add tomatoes, cucumbers, or even sprouts to your toast! I also like to add cheese for more spice 😉 As you can see in the picture, I didn't have any vegetables on it!!!! However, the eggs were a nice bonus for taste, texture, and protein!!



And those are my ideas to incorporate vegetables into breakfast!! I would not say I am a pro at this by any means, but these are some ideas that I personally use 😊 Let me know what you're ideas are!!
