Protein Pancakes: Only THREE Ingredients?!

This is my 100th blog post!!! So to celebrate, I thought I would share a fun recipe! I have a major sweet tooth, so I am always trying to find healthier versions of my favorite foods (ice cream, cake, cookies, brownies, etc etc).You may have read about the monster muffins I previously baked, and I am still working on a better recipe :) However, I have perfected something equally delicious- protein pancakes. There are at least a million recipes on Pinterest for protein pancakes, and I have tried just about all of them! I have sort of mixed recipes and ingredients to bring you this 3 ingredient protein pancake! And no, one of those is NOT banana. So many healthy recipes include bananas (which I admit can give a great texture in baking sometimes), but I personally do not like the taste of banana. So this is also a banana free pancake ;)

Your three ingredients are: 1) Protein Powder 2) Eggs 3) Oatmeal


And that is all! The recipe I am going to share makes two good sized pancakes (about the size of my whole hand), but it is also an easy recipe to halve in case you just want a little snack! I like to add in chocolate chips sometimes, and top with peanut butter and/or real maple syrup.

Ingredients:

  • 2 Eggs
  • 1 Scoop Protein Powder
  • 1/2 Cup Oatmeal

Directions:

  1. Turn griddle or stove on a medium heat, cover cooking surface in small amount of oil
  2. Beat Eggs until you get an even consistency 
  3. Add in the Protein Powder, stir until mixed
  4. Pour in Oatmeal until thoroughly mixed
  5. Pour your healthy, yummy pancake batter onto surface to make pancakes! Flip pancake over once the edges become matte/ aren't shiny anymore
And that is all you have to do! This takes me less than 10 minutes to make! It is so easy, so yummy, and so quick!

Oh and side note, you don't have to blend up the oatmeal, just use the whole oats! If all you have is instant oats, those work too!
